So, cold is getting here, and fall got here too, and I love soups. I have always loved them :0) and I made this soup as lunch for the week. It’s really heartwarming (hence the name) and also, is very smooth, tasty and best of all… healthy!! So what else would you like in a fall soup? I hope you give it a try and enjoy it. So let’s go to the recipe…
- 1 noodles pack, 1/2 lb
- salt and pepper, freshly ground
- 3 organic celery sticks
- 1/4 onion
- 3 organic tomatoes
- 1 cup organic spinach
- 1 organic green bell pepper
- 5 organic garlic cloves
- 1 tbsp dried, chopped chives
- 2L water (to cook the veggies)
Place in a deep pot at high heat, bell pepper, garlic, celery sticks, tomatoes, and onion.
Bring them to a boil and let them cook until soft. Each one has different cooking temperature, so start removing them and placing them in your blender when they are soft. Tomatoes, celery, garlic….
…Onion, bell pepper…
Blend on low for 30 seconds, then on high for 30 seconds. Add salt and pepper. Blend again. If it’s very thick, add 1/2 cup to 1 cup of cooking water.
Transfer again to the deep pot. Remove foam.
Add noodles and stir.
Add chives and bring to a boil. Let them cook at medium heat for 5 minutes, or until soft.
When nearly done, add spinach and stir. Remove from heat.
