Frijoles con veneno {Beans with Poison}: Of course they are not poisoned, they are toped with “asado de puerco” (pork roast), and it’s pretty spicy…

Enchiladas Rojas {Red Enchiladas}: They can be filled with either fresh cheese or chicken. They are topped with shredded fresh cheese. The tortillas are submerged in red salsa made of chile cascabel and ancho, or guajillo. The side are potatoes and carrots, fried in boiling oil.
