So I went to COSTCO and bought a BIG box of spinach because I wanted to prepare the Spinach and Ricotta Quiche and I did not use as much as I thought. So, I decided to prepare some Spinach Mac and Cheese and I found the one that caught my eye: the recipe girl’s recipe. Of course, like always, I changed it a bit.
- 3 tbsp butter
- 1/2 cup finely chopped onion
- 1/3 cup flour
- 2 cups milk
- salt and pepper to taste
- 4 handfuls finely chopped spinach fresh leaves
- 2 cups shredded cheddar cheese
- 4 cups cooked pasta (I mixed some elbows and others I already had)
Start by melting the butter over medium heat.
Add the onion and saute until softened. Whisk in flour until golden. Add milk whisking.
Add a pinch of salt and pepper. Bring to a boil and continue whisking until sauce thickens, 10 to 12 minutes.
Add spinach and stir. Add cheese. And stir.
Add cooked pasta.
Stir and remove from heat.
It’s good!! But more than a side, I consider it a complete meal.
